Remove the icing (which I found high in fat & tasted funny). Instead, mix 100g of 95% fat free cream cheese with 1/2 cup of Greek non fat plain yogurt, 1 tbsp of Splenda & 1 scoop of whey protein. Pour half of the batter, place a good spoonful of cream cheese goodness in each muffin, then full with remaining batter. A surprise pocket of protein rich cream cheese goodness in every one! Works with chocolate or vanilla....
