Breakfast: Egg white hash with onion, red pepper, black beans, corn and a little cheese served atop a corn cake thin with mashed avocado.
Quinoa and apple stuffed acorn squash & a tossed salad with chicken.
Cumin lime tilapia tacos with a fresh pineapple salsa - Pineapple, red pepper, red onion, avocado, cilantro and lime juice) served on warm corn tortillas with a little 0% greek yogurt.
My HUGE nightly salad: Herb salad mix, rainbow slaw, matchstick carrots, tomatoes, cucumber, radish, granny smith apple, pomegranate, chicken and 1 tbsp asian sesame dressing.
My Supper Tonight: Salad made with spring mix, alfalfa sprouts, carrots, cucumber, tomato, apple, pomegranate & 1/2 tbsp asian sesame dressing. Served with 4oz sweet potato, 3oz chicken breast, 1oz avocado and a dollop of 0% greek yogurt. YUM!
Lunch tomorrow: Black quinoa, ground turkey and broccoli with a lil franks red hot sauce.
My Supper Tonight: Red Thai Coconut Curry Shrimp with Shirataki Noodles. Cals: 189, Fat 4.7, Carb 11.2, Prot 27.3. Had higher expectations for this. Shirataki noodles are essentially carb free and were rubbery and not too enjoyable. Next time: Rice!
Last meal of the day: Protein Cheesecake with Blackberry Cinnamon Sauce (blackberries, cinnamon, lemon juice). Cals: 334, fat 19.7, carb 12.4, protein 26.5.
My Supper Tonight: Toasted Coconut Tilapia with Pomegranate Salsa (pom, tomato, red onion, cilantro and lime juice) & Black Quinoa. 355 Cals, 7.7 fat, 40.3 carb, 29.2 protein.

My Supper Tonight: Rosemary Garlic Steak with a little side of Bruschetta made on weight watchers brand bread. Really tasty!
My Supper Tonight: Spicy shrimp tossed with a warm salsa (avocado, mango, tomato, pomegranate, serrano and red onion) mixed with roasted garlic & olive oil couscous. 291 cals, 6.08 fat, 38.5 carb, 22 protein.
My Supper Tonight: Cayenne-Rubbed Chicken with a Fresh Salsa (avocado, red onion, pomegranate, mango, corn and lemon juice) served with Black Quinoa cooked in beef bouillon. 494 cals, 15.9 fat, 52.3 carb, 34.7 protein.
Mango Shrimp Ceviche: tomato, red onion, serrano, avocado, mango, shrimp , cilantro & lime juice).
My Supper Tonight: Black Bean & Cheese Taquitos (black beans, mozza, 2 corn tortillas pan "fried" with Pam cooking spray. Served with Mango Shrimp Ceviche & a dollop of 0% greek yogurt. 511 cals, 15.2 fat, 44.7 carbs, 38.4 protein.
My lunch today: Salad with romaine, cucumber, tomato, rainbow mix slaw with broccoli, onion, serrano, pomegranate, feta and chicken with 1 tbsp of mango chipotle dressing.
Eating breakfast at my desk after my run: 2 corn tortillas, 2 eggs, 2 servings of egg whites, avocado, tomato, onion, yellow pepper, tomatillo and cilantro. It was so good...I'm still hungry though!
Last meal of the day: Fruit Salad with Red Delicious & Granny Smith apples, kiwi, raspberries and blackberries. tossed with a little lemon juice. Trying to catch up on my carbs for the day!
Last meal today - Carrot Cake Protein Cheesecake w cream cheese "icing" (0% greek yogurt, 1tbsp cream cheese,1 packet of splenda whipped together). A lil toasted coconut on top. Both slices: 350 calories, 19 fat, 11 carb, 30 protein. Fits my macros!
