Hello friends⦠Wanted to share this yummy little meal . I usually throw this together quickly after work. When I prep chicken breast on Sundays, I usually measure 4oz servings in to snack bags for various meal options during the week. For this meal, I usually will go a little lighter on the angel hair pasta, but add lots of veggies. I cut all the veggies up and sauté on a high heat with spray oil and a little garlic salt. Today I used asparagus, jalapeño, yellow onion, zucchini, mushrooms, and red bell pepper. While doing this, I boil the noodles. I prefer them al dente, which only takes a few minutes. I also like my veggies a little crisp. I then add my precooked/measured chicken to the veggies and 1tbsp of the Szechuan Spicy Sauce, a splash of chicken broth (or water) and a splash of soy sauce. Add my strained noodles and sauté for just another minute. Toss it in a bowl and garnish with cilantro and green onions. If you like peanut sauces, adding a tsp or two of powdered peanut butter during the final mix of ingredients is yummy as well. You can curtail this recipe to meet your macro needs.
