What Happens When You Eat Carbs

Isn't it all about balance and understanding the difference between complex and simple carbs? What about calories in, calories out? I don't support nor am I against Ketogenic diets, but given the popularity of Keto diets lately, carbs have received a lot of bad publicity. What do you think?
