Inspired by the Egg/Avocado dishes I've been seeing - I cooked Eggs in Bell Pepper Rings, mashed Avocado, sliced Tomatoes and sandwiched between Ezekiel Bread, Yummy!

Last Night's Dinner, Baked Beef & Eggplant. Super Easy to Make!! Brown Beef, Stir In Organic Tomato Sauce and Italian Seasoning. Layer Sliced Eggplant, Beef Mix and Parmesan in a Dish. Bake 400* for 30 min - Cool for 10 min b4 serving.

Had 11 grams of Protein and a Few Carbs left so I made a Strawberry Frozen Yogurt for Dessert using 0% Fat Plain Greek Yogurt, added about a tsp of chocolate, Yum!

Baked Mahi w/ Mango Chutney - Easy to Make 1 Mango, 1/2 Red Bell Pepper, 1/4 Onion, Cilantro and Lemon Juice - I also added Sriracha and Chili/Cayenne mix in bowl.

Zucchini Chips - Zucchini, thinly sliced and dipped in any type Plain Yogurt add Herbs, then mix 1 tbsp Olive Oil, 1/4 cup Parmesan and Panko Breadcrumbs and toss yogurt dipped zucchini in parm/crumb mixture. Place on a Foil and Bake at 400* 30 min.

Yogurt Marinated Coconut Chicken How to Make - Coat Chicken Breast in Any Type of Plain Yogurt and Place in Fridge, When Ready to Bake Mix Equal Parts Panko Breadcrumbs and Shredded Coconut add Herbs and Coat Chicken Breast - Bake 30-45 min, Enjoy!
