Do you like green eggs?!?! I think Dr. Seuss might have been onto something!! This week I'm focusing on incorporating more whole vegetable nutrients into my meal prepping. Below are photos of my breakfast and lunch for this week. Simplicity is the key! We prepped our entire meal plan on Sunday, and we are ready for another challenging week! Meal Recipes: Breakfast: 3 whole eggs 2 cups spinach 1oz cheddar cheese 2 pieces of Ezekiel whole grain sprouted bread *put everything in the blender, and scramble! Lunch: 4oz chicken breast 2 cups spinach 1/2 cup quinoa .5 oz dried cherries(low sugar) 2 tbsp Balsamic Vinaigrette
