You can definitely have fries! 2 cups is 156 cal, 4g fat, sodium 110 mg, 4g protein and 7g carbs! promise you, you will love these! 1/2 Eggplant cut into fries (should yield 2 cups) depending on the size! 1/4 cup Panko bread crumbs, 1/4 cup real shredded lowfat Asiago cheese or any lowfat shredded hard cheese you like, 1/3 cup egg whites 1 tsp garlic powder, 1/2 tsp pepper and any other seasonings you like! Combine bread crumbs and cheese! Soak eggplant in egg whites, coat in bread crumb mix! Spray pan with cooking spray, lay fries down, spray top with cooking spray. Bake for 25-30 min or until golden brown!! ENJOY ENJOY FIT FAM!!!
