Happy Thanksgiving everyone. It's Just Tony and me this year so a small rib roast with garlic chili paste coating and eggnog pumpkin cream pie made from scratch. Turkey next week with friends.

EASY Meal ! Skinless Chicken breasts, salt and pepper. 400 degree oven for 30 mins. Uncovered. Spoon jar salsa over the top and bake 15 mins more. Serve with brown rice and extra salsa. Or shred chicken and wrap in warm tortilla with greens.

Dried Tomatoes (Dehydrator). Intense flavor. Yum! LOTS of prep time involved. But Since I have time and 5000 lbs of tomatoes. 15-20 hours drying time. Keeps 6-8 months in fridge. Low fat. HIGH in flavor & vitamins. Many uses.

Homemade Tomato Basil Sauce. Yes tomatoes contain sugar BUT are a great source of vitamins and minerals. Basil's a great source of vitamin K. I love having control of what I put in my body. Using herbs instead of salt for flavor. Many uses!

Dinner tonight. Pumpkins are 6 weeks early. So made chicken pot pies baked in sugar pumpkin shells. Easy and healthy using many veggies from our garden. Covered the tops with mashed garlic sweet potatoes and bake. Recipe to follow

Dinner. Roasted 12lb herb stuffed Turkey. Serving garden Japanese eggplants, squash, heirloom tomatoes, potatoes, garlic tossed in olive oil and roasted. The tomatoes create a sweet/savory sauce. 1 pan! 2-1/2 hours at 400 HEALTHY!
