Jason,
I think taking time off (you mentioned a week) can be very productive. To maximize a short layoff, I suggest the following.
1-Make your first break only 4-full days off
2-Prior to your 4-day rest, do 25% more sets per body part, rest less than 30 seconds per set, and eat 25% less carbs.
Then eat about 40% protein, 40% carbs and 20% fat during your layoff.
By doing the above you will actually come back to the gym bigger, leaner and harder.
Let me know how it goes.
