I think alot of it would be bad but small amounts like say 1 diet soda per day isn't enough to hurt you unless you have an allergy to phenylalanine.

Possibly. A good thing to do is when you hit a sticking point, add in an extra 2 days of recovery time between all lifting sessions from that point on. As you become stronger you need extra recover time to compensate for the deeper inroad cut into the muscles recovery ability.

The HIIT cardio is the way to go so your right on that. Diet is the other main factor in leaning out. Try to eat at least 5 small high protein meals per day and try to take in just enough carbs to keep up your energy but that's it. Try to get most of your carbs from nutrient dense, fiberous vegetables like broccoli, spinach, green beans and asparagus.
