One of my family's biggest weaknesses is taco night. We use the sodium filled taco seasoning and we like to tell ourselves "it's not that bad for us!" Well here is a healthy Mexican bowl substitute cheaper than chipotle and lower in sodium. It's cut up bell peppers, ground chicken and kidney beans stove cooked and I seasoned it with a little bit of salt and pepper. Through it over some stove top brown rice and sliced avocado. You got your protein, veggies, healthy carbs and fats. So good so fresh and you don't need to oil cook tortillas. This is something we can tweak along the way but this was my first try at it. It's pretty tasty.
