Peppers stuffed with chicken, salsa and guacamole on a kale and celery salad. Steamed asparagus, mushrooms and low fat cottage cheese on the side. Plus protein truffles for desert :) parents said "I didn't know veggies could make me so full" funny how that works ;) glad they enjoyed it.
