Sweet Potato & Black Bean Chili

Sweet Potato & Black Bean Chili 3 cups cubed sweet potatoes 1 can low sodium black beans 1 can diced tomatoes 1 cup water (preferably low or no sodium) 1/4 cup chopped red onions 1/4 cup chopped bell peppers 1/4 cup chopped cilantro (garnish) 4 garlic cloves minced 3 tbsp olive oil 3 tbsp ancho chili powder (or any chili powder) 2 tbsp lime juice Heat olive oil on medium heat in a dutch oven or a pot. Sauté garlic until fragrant. Add onions, bell peppers & sweet potatoes and saute for about 5 minutes. Add chili powder, chipotle & lime juice. Add water and cook on low to medium for about 5 minutes or until potatoes or fork tender but not mushy or falling apart. Add tomatoes, beans and cook for about 5 minutes. Top with cilantro and enjoyâ
