Goal (Long):
Workout 6 days a week with both cardio and weights, eat 5-6 small meals a day with proper proportions of carbs, protein and fat, drink a gallon of water a day.

You look great, especially for 41. I would have said late 20`s, maybe. 15lbs seems a bit much, but I guess if its being replaced with lean muscle, it doesn`t much matter. Good luck with your goals.
