Here is a fresh twist to a recipe that might be one of your favorites

I am going to try to post a new recipe a week to help people find new fresh twist to their favorite meals.

 

Tortilla Soup

Yields: 1 quart

Servings: 5

Portion size: 3/4 Cup

 

2 teaspoons minced garlic

4.5 ounces diced onion

1 quart of chicken stock

7 corn tortillas (whole wheat is even better, but up to you) cut into thin strips 1/2 inch by 3 inches

1 tablespoon chopped cilantro

4.5 ounces tomato puree

1/2 tablespoon ground cumin

1 teaspoon chili powder

1 bay leaf

..........Garnish...........

1/8 cup of shredded cheddar cheese

Toasted tortilla strips from earlier

3.5 ounces of grilled chicken breast, cut into strips

2 ounces of diced ovocado

 

 

1. Sweat the garlic and onions in a small amount of stock until translucent.  Puree in blender and set aside.

 

2. On a rack in a 200 degree oven, lightly toast the tortillas until crisp.  Set aside 1/4 cup for garnish. Crumble the remaining tortillas and reserve

 

3. Combine the crushed tortillas, cilantro, onion and garlic puree, and tomato puree in a soup pot.  Bring to simmer.  Add the remaining stock, cumin, chili powder, and bay leaf.  Simmer until flavorful, about 15 minutes.  Puree the soup. 

 

4. For each portion, Laddle the hot soup into a heated bowl with a 6 ounce ladle. Garnish with 1/2 teaspoon of cheese, a few tortilla strips, and 3/4 ounce chicken, and 1/3 ounce of avocado.    And Enjoy!

 

Nutrition per serving:

171 calories, 6 grams fat, 18 grams cabohydrate, 12 grams protein, 412 sodium, 21 grams cholesterol

  • Yep, Ryan..u def need to make a change :) I was in ur shoes six weeks ago...I had been at a plateau for so long... so I did some research and found some kick @ss new routines and a new clean diet...and I'm over that plateau... I hope u find something to kickstart you motivation!! :))

kratoscomm Hi! I'm doing good. It's mostly diet and a little cardio. I try to keep my diet clean and avoid fast foods and sugar. I drink a lot of water. My main abs exercise is hanging leg raises. When preparing for a competition I will do 5 sets (25,25,25,20,20 reps) after each weight training session. Also, I will do 20 mins of HIIT cardio on a treadmill. I'm working hard now trying to get back to that level of conditioning because I hope to compete in March 2012. It's tough after the holidays. Lol! Dec 20, 2011 9:02pm

ShanBL If your stats are updated, then I would concentrate on building muscle and not worry so much about losing the fat (but stick with the cardio). You'll begin to look leaner as you build muscle. Keep up with that diet. You're getting plenty of protein. Oct 20, 2011 9:10pm
